Here at myBaker, we are of course big fans of cake but what you may not know, is that we are also huge fans of French patisseries. Little cakes, tarts, pastries, viennoiserie all fall under this category and we cannot get enough of it!
The European tradition of pastry making can be traced back to ancient times but it was only until the 17th and 18th centuries, the French perfected the craft of dessert making and pastries. Antonin Carême, considered the first “celebrity chef”, created elaborate dessert sculptures and varieties for royalty. Today, not every bakery can use the term “patisserie”, it is now a title legally controlled in France and Belgium that may only be used by bakeries that employ a licensed maître pâtissier (master pastry chef).
When looking through the window of a patisserie, all the individual tarts and pastries are beautifully displayed and lined up neatly for passers-by to lust after. All the bright colours and pretty delicate portions are hard to resist! While these little desserts may look effortless to make, they often combine numerous elements which can be very delicate and require a high level of expertise to create. Take a look at our rhubarb tartlets for example, which consist of a rhubarb and strawberry compote encased in a vanilla mousse dome, placed on top of a delicious almond dacquoise in a sweet pastry case.
